Cabbage and pumpkin are the protagonists of today's recipe, which we will use wisely to obtain fabulous vegetarian rolls (ideal to serve as an appetizer or as a delicious side dish).

- 8 leaves (about 500 g) of cabbage
- 8 slices (about 200 g) of smoked cheese
- 500 g of pumpkin pulp
- 1 sprig of rosemary
- 3 tablespoons of extra virgin olive oil
- Q.b. of salt
- Q.b. of pepper
- 20 g of grated Parmesan cheese
- 20 g of breadcrumbs

Preparation
- First, clean the pumpkin: cut it in half, and deprive it of seeds and internal filaments. Cut the pumpkin into slices and remove the hard and massive peel with the help of a knife. Cut the pulp into cubes.
- Heat a pan and pour a tablespoon of extra virgin olive oil. Gather the pumpkin cubes and sauté them over high heat for a couple of minutes or until golden brown. Season with salt and pepper. Lower the heat, cover with the lid and continue cooking for about ten minutes. At the end of cooking, flavor with finely chopped rosemary.
- Fill a large saucepan with plenty of water and bring to a boil.
- In the meantime, devote yourself to the preparation of the cabbage. Gently detach the cabbage leaves, avoiding breaking them. Wash them thoroughly, then boil them in water for 2 minutes or so, until the leaves have taken on a soft consistency.
- Drain the cabbage leaves from the water, letting them drain in a colander. Allow to cool. Arrange a slice of cabbage on a cutting board and, with a small knife, deprive it of the stiffer and more fibrous central grain. Proceed in this way also with the other leaves. If the leaves are large, cut them in half to make two rolls from each.
- Grease a glass dish with a tablespoon of oil, then sprinkle the surface with breadcrumbs.
- Preheat the oven to 200 ° C.
- Place a slice of smoked cheese in the center of each cabbage leaf, then stuff with the diced pumpkin. Close the package leaf and arrange the roll (with the folded side down) in the baking dish. Proceed in this way also with the other cabbage leaves, taking care to arrange the rolls next to each other.
- Brush the surface of the rolls with a tablespoon of oil and finish with the grated parmesan and a tablespoon of breadcrumbs.
- Bake in a hot oven, preheated to 200 ° C, for about 15 minutes. For a better gratin, it is advisable to turn on the grill 2-3 minutes before removing the rolls from the oven.
The quick and alternative idea!
To speed up the time, you can cook the cabbage rolls in the microwave. In this case, 6 minutes at 800-1000W and one minute with the "grill" function are sufficient.
An alternative is cooking in a pan: in this case, the rolls are browned in a pan with a drizzle of oil and cooked for ten minutes over moderate heat.- Serve the steaming cabbage rolls, as an appetizer or as an alternative side dish.
