Ingrediants
- 300 g of cauliflower
- 300 g of beetroot
- 200 g of thistles
- About 700 ml of water
- 1 pinch of salt
- 1 pinch of red pepper
- 3 tablespoons of extra virgin olive oil
- 100 g of 5-calorie risino made with konjac gum

Preparation
- Clean the cauliflower: remove the outermost ribs and detach the inflorescences. Rinse the cauliflower clumps in cold water, rubbing the buds to remove any traces of soil.
- Cut the precooked beetroots into cubes.
- Dedicate yourself to cleaning the thistle. Separate the ribs from the head, removing any leaves. Deprive the coasts of hard and woody filaments, using a knife or a vegetable peeler. Cut the thistles into cubes and collect them in a bowl with water and lemon, a very useful precaution to prevent the rapid oxidation of the vegetable.
- Collect the clean vegetables in a saucepan, add the fennel seeds, cover with water (about 700 ml) and bring to the boil for about half an hour.

To prepare this recipe we have carefully chosen the vegetables, in the idea of making a purifying soup. Cauliflowers, being rich in fiber, intervene in the purification and restoration of intestinal function (often compromised in the period immediately following the Christmas holidays). red beetroot is mainly used here for its purifying properties, while thistle is an excellent food capable of promoting liver function (it helps purify the liver of toxins).
Fennel seeds help to deflate the belly: in fact, they are an excellent natural remedy against bloating.- In the meantime, devote yourself to the preparation of konjac rice. Fill a saucepan with water and bring to a boil. Open the package of konjac risino and rinse it in cold running water. Dip the risino in boiling water and cook for 2 minutes.

Glucomannan is a polysaccharide derived from mannose, present in the konjac tuber. In contact with water, it does not break down into simple sugars but increases its volume to form a gelatinous and dense mass that stretches the stomach walls with an anorectic effect (reduces the feeling of hunger). It is indicated in case of constipation and as an adjunct to slimming diets.
It brings very few calories because the fiber is not digested by the body, leaving however a typical feeling of satiety.- Drain the risino and flavor it in a pan with a drizzle of oil, a pinch of salt and chilli.
- When the vegetables are cooked, remove any excess liquid, add a drizzle of oil and blend everything until a smooth and soft consistency is obtained.
- Serve the purifying soup accompanying with the konjac rice.
