Ingrediants
- 500 g of turnip greens
- a pinch of salt
- a pinch of pepper
- 200 g (3 pieces) of chicken sausages

Materials Needed

- 1 sharp knife to cut the turnip greens and 1 for the sausage
- 1 pan to cook the turnip greens

Preparation
- In a saucepan pour a couple of liters of water, bring to a boil and add salt to taste.
- In the meantime, carefully wash 500 g of turnip greens leaves, drain and cut them into thin strips.
- Boil the strips of turnip greens for 10-15 minutes, until soft
Why cut turnip greens into strips before boiling them?
This operation can also be performed after cooking: in this recipe, it is advisable to cut them directly from raw to speed up cooking and to avoid burns, once removed from the water.- As long as the tops are cooked, proceed with cooking the chicken sausages. In a hot pan, add the sausages previously cleaned from the casing and cut into cubes. Proceed with cooking over high heat for a couple of minutes; then, lower the heat and let it cook slowly for another 2-3 minutes.
Attention
Do not add oil or other seasonings to the pan: the sausages, although much leaner than the classic pork sausages, still have a sufficient amount of fat to brown to perfection, without necessarily having to add oil or butter during cooking.- After boiling for 10-15 minutes, the turnip greens are cooked: with the help of a slotted spoon, transfer the turnip greens from the saucepan to the pan containing the sausage. Raise the heat of the pan, season with pepper, add a clove of garlic and a little pepper to make the dish tastier.
- Continue cooking over high heat until all the water from the pan has dried (about 5 minutes).
- Serve the turnip greens with the chicken sausage piping hot.
