Today is a Friday in Lent and, as Christian tradition dictates, it is good to abstain from meat. So I propose a recipe in full respect of religion: pasta with salted sardines. It is a poor dish, much consumed in the past by our grandparents, but much appreciated even today. In Sicily, this dish is prepared with fresh sardines, to which aromas and dried fruit are then added. but my version, with salted sardines: let's find out together.

- 180 g of pasta
- 150 g of salted sardines
- 3 tablespoons of extra virgin olive oil
- 1 clove of garlic
- 1 sprig of parsley
- q.s. of pepper
- Grated rind of untreated lemon

Preparation
Please note
To prepare this recipe we used salted sardines, which require careful washing in cold water, as well as removing the entrails and the tail.- Cook the spaghetti in plenty of NOT salted water: the salt contained in the sardines will be sufficient.
- In the meantime, prepare the sauce with the sardines. Blend the salted sardines to a cream, washed and cleaned: in this way you avoid the risk of finding thorns on the plate! To facilitate blending, it is recommended to add a tablespoon of oil to the blender.
- Collect the cream of sardines and heat it gently in a pan, adding a couple of tablespoons of extra virgin olive oil. and a little water from the pasta. Season to taste with a clove of garlic.
The right idea
The pasta water is used to reduce the amount of oil to be used in the sauce!- With a fork, remove the pasta al dente and pour the spaghetti directly into the sardine sauce. Chop the parsley and add it to the pasta. Season with pepper.
- Serve the steaming spaghetti with a grated lemon zest.

And if it seems to you that the sauce is too abundant for the quantity of pasta, then keep the excess aside, cover it with a good extra virgin olive oil and keep it in the fridge: so you'll have it handy for the next time.
