What did he say that gluttony goes on vacation? Today we will cook together an extraordinary dessert that has its origins in France: the clafoutis! It is a sweet batter prepared with eggs, sugar, milk and flour, and enriched with fruit season. The original dessert was prepared with cherries, but it can of course be made with all the fruit we like best. And I propose it with peaches!

Did you know that
In the past, clafoutis was made exclusively with cherries. Today this dessert can be prepared with peaches, apricots, plums, apples or anything else.- Prepare the dough. Shell the eggs and beat them with a whisk together with the sugar and a pinch of salt.
- Combine the sifted flour and milk, continuing to mix the ingredients. Flavor with half a glass of limoncello and the zest of an organic lemon.
- Pour the rather liquid mixture over the peach slices. Sprinkle with a pinch of cinnamon. Bake the cake at 180 ° C for 35-40 minutes.
Did you know that
In cooking the clafoutis will swell a lot. Once removed from the oven, the cake will slowly deflate: this is a characteristic of the clafoutis.- Remove the cake from the oven and allow to cool. Cut into slices and serve with a sprinkling of powdered sugar.

Peach Clafoutis is not among the foods recommended in the diet for overweight and metabolic diseases (especially type 2 diabetes mellitus and hypertriglyceridemia), but - among the sweets - it certainly represents one of the least inappropriate.
