- Canned product: 150 g of smoked salmon
- Q.b. of salt
- 1 sprig of parsley
- 1 tablespoon of pink pepper
- 500 g of potatoes
- 50 g of black olives
- 1 tablespoon of extra virgin olive oil
- 50 ml of milk
- 200 g of zucchini

Preparation
- Wash the potatoes with the peel, removing any traces of soil.
- Boil the potatoes in lightly salted water until soft.
- Meanwhile, prepare the vegetables. Peel the carrots and cut them into 5 mm thick slices. Blanch the carrots in salted water for 5 minutes.
- Prepare the courgettes: remove the ends and wash them thoroughly in water. Cut the zucchini lengthwise into 3-4 mm thin slices. Cook the courgette slices in a pan, turning them from time to time with the spatula: just a few minutes will be enough.
Perfect cooking
To get perfect zucchini, you don't need to grease the pan. It is advisable to brown the slices in a very hot stone or non-stick pan, without adding oil.- Gently arrange the courgette slices on a plate and flavor with a tablespoon of oil, a pinch of salt and a little parsley.
- When the potatoes are ready, you can proceed with the filling. Peel the still hot potatoes with the aid of a small knife if necessary. Mash the potatoes in a bowl.
- In a mortar, crush the pink peppercorns and add the mince to the potatoes.
- Then add the mashed potatoes to the other ingredients or to the sliced olives, the chopped parsley, the coarsely chopped smoked salmon and the milk: if necessary, add a little more milk.
- Line the edges of a heart mold with the courgettes and the base with the carrot slices.
- Pour the potato and salmon mixture into the mold, taking care not to lift the carrot slices.
- Bake the pie in a hot oven, 200 ° C, for about 30-40 minutes or until golden brown.
- Allow the pie to cool in the mold for a few minutes before turning it over onto a serving dish.
