Often, however, when I taste a pancake or another fried sweet I notice a problem: my mouth fills with oil and it is a sensation that I really don't like. But then: how is it possible to make a good fried dish? Today we will find out together by preparing excellent pancakes ... fried yes, but read as much as possible!

Ingrediants
For the dough
- 170 g of white flour type 00
- Half a glass of rum
- Half a sachet (8 g) of baking powder
- 55 g of sugar
- 50 ml of milk
- 50 g of lemon verbena
- 50 g of sultanas
- 125 g of yogurt
- About 70 g of apples
- 60 g (1 medium) of eggs
- 70 g of cornstarch
To sprinkle
- 20 g of granulated sugar or powdered sugar
For frying
- About 600 ml of peanut oil
Materials Needed

Preparation
- In a bowl, combine all the dry ingredients, that is the sifted white flour, the cornstarch (corn starch), the granulated sugar and the baking powder.
- Soak the raisins in warm water.
- Peel half an apple and cut the pulp into very small pieces.
- Cut the cedrini with a knife.
- Mix the dry ingredients with an egg, the yoghurt, the milk, the softened raisins (and well squeezed by the soaking water), the pieces of apple and the diced limes. Flavor the mixture with half a glass of rum.
Alternatives
Those who do not like the aroma of rum may prefer the simple grated rind of lemon.
Still, instead of citrines, it is possible to use dried plums or dried apricots, reduced to small pieces.- The pancake dough is ready.
- Heat the peanut oil until it reaches 180 ° C: it is recommended to monitor the temperature with a specific food thermometer in order to avoid the formation of toxic compounds that are potentially harmful to health.
- With the help of a couple of steel spoons or an ice cream portioner, collect a part of the batter and fry in oil at 180 ° C.

It is advisable to prefer a pan with high sides to make sure that the pancakes have enough space to toss and turn in the oil.
For optimal cooking, it is also recommended to cook a few pancakes at a time: in this way, it will be easier to keep the temperature constant.- The pancakes will be ready when the surface appears golden (2-3 minutes).
- Remove the pancakes from the cooking oil with the help of a slotted spoon. Place the pancakes on a tray or in a bowl with absorbent paper.
- Sprinkle with powdered sugar or granulated sugar to taste and serve.
