- 150 g of white flour of type 00
For the sauce
- 125 g of fresh ricotta
- q.s. of pepper
- a tablespoon (10 ml) of extra virgin olive oil
- 50 ml of milk
- 300 g of champignon or chiodini or pioppini mushrooms
- 1 clove (optional) of garlic
- q.s. of salt
For the stuffing
- 150 g (well drained) of salmon in oil
- 1 pinch of salt
- 1 sprig of parsley
- 150 g of potatoes
- 1 grated nutmeg
- 15 g of grated Parmesan cheese

- Casserole for potatoes and for cooking pasta
- Sauce pan
- Hand blender for chopping beetroot with beaker

Preparation
The preparation of Valentine's Day ravioli is not difficult, even if rather laborious. In summary, the main steps for the realization are:
- Preparation of the sauce
- Preparation of the red pasta
- Preparation of the filling
- Stuffing
- Cooking ravioli in boiling water
- Seasoning
WHAT TO START
- First clean the mushrooms, cook them with a drop of extra virgin olive oil, salt, pepper, garlic (if you wish) and cook until soft.

In this recipe we used pioppini mushrooms, which require about 2 hours of cooking: in this case, we recommend adding a little water to facilitate cooking.- Peel, wash and chop the potatoes. At this point, cook them in boiling salted water for 10-15 minutes.
FOR PASTA
- Cut a beetroot into small pieces (150 g): pour everything into a beaker together with an egg. Blend everything with the immersion mixer until it forms a cream.
- Pour the beetroot and egg cream into a bowl; add the semolina flour and the white flour type 00 until a smooth, elastic and homogeneous ball is obtained.
- Let the dough rest for about ten minutes.
FOR THE STUFFING
- Prepare the filling: mash the potatoes with the appropriate tool, then add the well-drained salmon. Also add the chopped parsley, salt, grated nutmeg and parmesan to flavor.
FOR RAVIOLI
- At this point, you can proceed by preparing the ravioli. Roll out the dough to a medium-thin thickness. Place the heart-shaped mold on the dough, to get an approximate indication of the distances to keep to put the filling.
- At this point, arrange tufts of filling on the pastry sheet (we recommend using two teaspoons), spaced one from the other, in one half of the sheet. Now close the pasta "in your pocket" and mash the pasta with your hands to eliminate all the air.
- Now cut the hearts with the heart mold. It is recommended to refer to the video.
- Dip the ravioli in abundant salted water and continue cooking for a few minutes.

It is advisable to simmer the ravioli, avoiding that the flame is too high: in this way, you avoid the hearts from opening during cooking.FOR THE SAUCE
- In a pan, melt the ricotta with a little milk: this cream will be the base of the ravioli.
- Arrange the ricotta cream obtained on a plate. On top of the cream, arrange the mushrooms neatly and, when cooked, also the ravioli.
- Serve with a sprinkling of grated Parmesan cheese and parsley.
