Do we vegan the Carnival?
I plan to bring castagnole to the table, but in the strictly vegan version! So no butter, eggs or milk for our fried foods: this year, Carnival will be vegan in all respects! Let's have fun preparing the orange flavored wholemeal damselfish together!

Ingrediants
For about 70 damselfish
- 150 g of wholemeal flour
- 70 g of frumina
- 6 g of baking powder
- Peel of untreated oranges
- Whole food, organic: 70 g of cane sugar
- 40 ml of corn oil
- 125 g of soy yogurt
- 25 ml of soy milk
For Frying
- 500-600 ml of peanut oil
Materials Needed
- Bowl
- Scale weighs food
- Blotting paper
- Skimmer
- Wide saucepan with high sides
- Food thermometer
- Knife
- Mixer
Preparation
- Blend the brown sugar together with the orange zest.
- In a bowl, combine the wheat starch, the wholemeal flour and the flavored wholemeal cane sugar. Add a pinch of salt and the sifted baking powder. Mix the powders.
- In the center, combine the soy yogurt, soy milk and corn oil. Mix all the ingredients together to form a soft, compact and non-sticky ball.
- Let the mixture rest for 30 minutes.
- Divide the dough into 4 parts and thus obtain some cords. Cut the cords into pieces and make balls that are little more than a hazelnut. Follow the same procedure as required for potato gnocchi.
- Pour the peanut oil into a saucepan and wait for it to reach 160 ° C-170 ° C.

It is recommended to monitor the temperature with a specific food thermometer and not to exceed 180 ° C in order to avoid the formation of toxic compounds, potentially harmful to health.- Dip the balls of dough thus obtained into the boiling oil, turning them from time to time. Wait a few minutes and remove them from the oil when they have assumed a dark hazelnut tint. It is advisable to drain the damselfish with a slotted spoon and then place them on a plate lined with absorbent paper.
- Serve the vegan damselfish with finely chopped brown sugar.
