If you want your Easter lunch to remain etched in the memory of your guests, why not propose dishes that are very, very different from the usual? So I thought I'd start the menu with a very special gazpacho, a sort of frozen soup made with strawberries! Let's find out the recipe together!

Ingrediants
- 100 g of cucumbers
- q.s. of salt
- 200 g of tomato puree or coppery tomatoes
- q.s. of pepper
- A few mint leaves
- A sprinkle of balsamic vinegar glaze
- A few ice cubes
- 300 g of strawberries
- 1 tablespoon of coriander seeds
- 1 piece of fresh ginger or 1 teaspoon of ginger powder
Materials Needed
- Glass blender
- Vegetable peeler
- Glasses
- Chopping board
Preparation
- Clean the strawberries: remove the stalk, wash them in cold water and dry them gently with absorbent paper.
- Cut the strawberries into pieces and pour them into the blender glass.
- Wash the cucumber, peel it and cut it into pieces. Combine the cucumber with the strawberries.
- Combine the peeled tomatoes, ginger (powdered or fresh), coriander seeds and mint leaves.

It is possible to enrich the strawberry gazpacho with other flavors of your choice, such as basil, fennel or anise.- Season with salt and pepper to taste, then add a drop of glaze to the balsamic vinegar (or simple balsamic vinegar). Add a few ice cubes and blend everything.
- Distribute the gazpacho thus obtained in individual glasses and decorate with mint leaves and strawberry slices.
