Under the precious suggestion of Carmela, who looks at us from little Begosso, we will prepare together the spicy pasta rings with clams and Roman cabbage. Moreover, this recipe can also be defined as a dish of health thanks to the Romanesco cabbage, rich in antioxidants, vitamin C, vitamin K and carotenoids. Ingrediants
- 280 g of dough rings
- 350 g of Romanesco cabbage
- 400 g of clams
- 200 g of cherry tomatoes
- 1 pinch of red pepper
- 1 clove of garlic
- 1 tablespoon (15 ml) of extra virgin olive oil
- 1 sprinkle of brandy
Materials Needed

- pan with lid to flavor the pasta
Preparation
- First, clean the Romanesco cabbage: remove the inedible part and cut the vegetable into small pieces, in order to speed up cooking.
- In a saucepan, boil plenty of salted water and cook the Roman cabbage for 10 minutes, together with the pasta rings.
- As long as you are cooking the pasta and Romanesco cabbage, clean the clams: after having left them to soak in salted water for one night, wash them well under running water and let them open by pouring them into a very hot pan.

You can also buy shelled and shelled clams already cleaned! In this case, they are ready to stir-fry.- Prepare the sauce: in a large pan (diameter 28 cm recommended), pour a couple of tablespoons of extra virgin olive oil with a clove of unpeeled garlic. Then proceed by pouring the shelled clams with their shells, and add a little " of fresh or powdered chilli pepper and chopped parsley. Deglaze with the brandy (optional). Add the sliced cherry tomatoes and cook for a few minutes.
- A couple of minutes before finishing cooking, transfer the pasta and the cabbage to the sauce with a skimmer, adding a little cooking water. Over high heat, let the liquid dry.
- Before serving, sprinkle with a little breadcrumbs to make the dish tastier and more rustic.

Pasta rings with clams are a “typically Mediterranean” first course. The nutritional values per 100g of product (which are equivalent to approximately one portion) are excellent; these are characterized by a moderate energy value and very few total fats, of which saturated and cholesterol almost irrelevant. The proteins are mixed, of medium and low biological value, while the fibers (somewhat scarce) could be increased by using wholemeal pasta.
