More and more people are approaching a vegan, organic and raw food cuisine. Fascinated by this food philosophy, I too started experimenting with new combinations of ingredients, using foods as they are: in this way, it is possible not only to discover their natural flavor but also to enjoy all the benefits of nutrients, mineral salts and vitamins derived from the intake of raw foods. Today, therefore, we will see how to prepare excellent vegan and raw meatballs with pepper and hemp okara!

Ingrediants
For 8-10 meatballs
- 50 g of hemp seed okara
- 20 g of dried tomatoes
- 1 teaspoon of oregano
- Q.b. of pepper
- Q.b. of salt
- 8 g of yeast flakes
- 70 g of almonds
- 120 g of peppers

- About 30 g of hemp seed okara
- 30 g of sesame seeds

Preparation

To prepare this recipe we used the hemp seed okara, that is what remains from the extraction of the milk of the same name. For the recipe of milk with hemp seeds, see THIS VIDEO.- Soak the dried tomatoes to make them soft for 10-15 minutes.
- Clean the pepper, removing the stalk, the filaments and the internal seeds. Cut the pepper into small pieces.
- Chop the almonds until you get a powder.
- Combine the pepper in the blender, together with the soaked dried tomatoes (squeezed out of the soaking water) and blend until creamy.
- Combine the pepper cream in a bowl, add the hemp seed okara, the almond flour and the yeast flakes. Season with salt and pepper, and flavor with dried oregano. Mix the ingredients to obtain a pasty consistency. and dense.

If the consistency is too soft, it is recommended to correct it by adding ground almonds, hemp seed okara or dehydrated coconut.- Take a spoonful of the mixture and squeeze it in your hands to form a ball. Roll the meatball in the sesame seeds or in the remaining hemp seed okara.
- Following this procedure, get 8-10 meatballs. Before serving, keep in the fridge for at least half an hour to consolidate the ingredients.
