- 190 g of oat okara
- 120 ml of oat milk
- 270 g of Manitoba flour
- 8 g of salt

Preparation
- Dissolve the yeast in the oat milk sweetened with a teaspoon of sugar.
Curiosity
In this recipe, oat milk is used instead of cow's milk or plain water. Okara, on the other hand, is the exhausted pulp of oats, from which it is no longer possible to extract the milk. The proposed recipe therefore gives an interesting starting point to reuse the okara in a different way than usual.- In a bowl pour the Manitoba flour, the oat okara, the extra virgin olive oil and the yeast dissolved in the oat milk. Season with salt and work the dough for a long time, first with a wooden spoon. then by hand.
- Flour the ball of dough obtained, and place it in a bowl until it doubles in volume. It will take approximately 60-90 minutes.
- After the necessary time, work the dough until it forms 8 small balls. With scissors (or a sharp knife) cut each ball into a cross.
- Leave the balls to rise until doubled in volume.
Beware of moving around
The balls of oat bread are very delicate and fear sudden movements: in fact, if the pan with the leavened bread (but not yet cooked) is handled quickly, the balls will tend to collapse!- Bake in a hot oven at 180 ° C for about 20 minutes.

Nutritional values and Health Comment on the recipe
Soft bread with oats has the same caloric content as white bread type 00. It certainly contains a greater portion of protein and dietary fiber, but the lipid profile is almost overlapping. It is possible to replace traditional bread with oat bread to obtain a better intestinal function.
