- 1 pinch of cinnamon
- 200 g (10 giant pieces) of dates
- 20 g of agave syrup or honey
- 15 walnut kernels
- 100 g of fresh ricotta
- 1 pinch of ginger
Materials Needed
- Pastry bag or pastry syringe
- Bowl
- Ladle
- Knife
- Chopping board
- Platter
Preparation
- Score each date with the tip of a knife to remove the stone. Open the dates, taking care to leave one side together.
- Proceed with the preparation of the filling. In a bowl, mix the ricotta with honey. Flavor the cream with ginger and cinnamon.
- Fill a pastry syringe (with star tip) with the prepared cream and stuff the dates.
- Place a walnut kernel in the cream of each date and leave to cool well in the fridge for at least an hour.
Alternatives
The original recipe calls for stuffing the dates with a flavored mascarpone cream or with gorgonzola. Here we have instead proposed the lighter version with ricotta.
As an alternative, it is possible to use robiola or another spreadable cheese, preferably with a reduced fat content.- Serve the dates with a wooden stick.

Speaking of "light recipe" referring to stuffed dates does not seem particularly suitable. However, it is also true that we have replaced the classic super-fat cheeses such as mascarpone and gorgonzola with simple ricotta. Cholesterol is not excessive, while fiber is present in good quantities. Stuffed dates are not suitable for diet against overweight or type 2 diabetes mellitus. The average portion corresponds to about 35-45g (90-115kcal).
