- 200 ml of milk
- 40 g (2 medium) of egg yolks
- 160 g (4 medium) of egg white
- 40 g of sugar
- 20 g of cornstarch
- 130 g of dark chocolate
- Vanilla essence
- 50 g of pistachios
- 1 pinch of salt

Preparation
- Chop the pistachios using a blender.
- Grease 6 ceramic soufflé molds and sprinkle the inner walls with pistachio powder.
- Chop the dark chocolate with the knife.
- Quickly work the egg yolks with the sugar, using a simple whisk. When finished, add the cornstarch.
- Heat the milk until it just comes to a boil. Turn off the heat, add half of the chopped dark chocolate and the vanilla flavor. Add the cream of egg yolks, sugar and cornstarch to the milk. Bring to the boil again until the chocolate cream thickens.
- Let the mixture cool for 30 minutes.
- Preheat the oven to 190 ° C (static).
- Work the egg whites until stiff peaks, adding a pinch of salt. Incorporate the mass of egg whites into the cream, add the remaining chocolate flakes and pistachios, taking care to mix slowly and from bottom to top.
- Prepare the molds for cooking in a bain marie. Place the ceramic molds in an oven pan and pour the water into the larger container up to half the height of the molds.
- Distribute the mixture in the molds, up to 2/3 of the capacity. Cook immediately at 190 ° C for 20 minutes.
- Remove from the oven and serve the soufflé immediately, sprinkling with icing sugar to taste.
