- 100 g of soybean paste
- 200 g of carrots
- 200 g of zucchini
- 2 tablespoons of soy sauce
- 1 piece of ginger
- 100 g of bean sprouts
- q.s. of pepper
- 2 tablespoons of extra virgin olive oil

Soy vermicelli are a particular type of extra-thin pasta, typical of Asian countries. This pasta can be prepared in two ways: they can be left to soak in cold water for 15 minutes or they can be blanched for a minute in boiling water. After that, the vermicelli must be drained from the soaking or cooking water and added to the sauce.- Wash all the vegetables thoroughly. Peel the carrots and cut them into sticks with a knife or a grater. Also reduce the courgettes to thin slices.
- Peel the ginger.
- Pour 2 tablespoons of oil into the wok (or into a stone pan) and grate the ginger. Add the vegetables and brown them over high heat for 3-4 minutes, turning them often. Combine 2 tablespoons of soy sauce and plenty of ground pepper. Then lower the heat and finish cooking for another 3-4 minutes. Then add the bean sprouts and allow to flavor.

In this recipe we have not added salt to the sauce because the soy sauce is sufficient to give the right degree of flavor to the dish.- Meanwhile, blanch the soy noodles in boiling water until soft. If the noodles are too long, it is advisable to cut them with scissors.
- Add the spaghetti to the vegetable sauce and cook them for a couple of minutes in a pan before serving.

To keep the oriental theme, I suggest you serve them with the classic chopsticks, perhaps in a small bowl. You can then continue the menu with chicken with almonds or chicken in sweet and sour sauce.
