What is rice vinegar?
L "rice vinegar (rice vinegar in English) is a condiment with an acid taste, obtained by fermentation of starchy rice seeds (botanical species Oryza sativa).
Traditional ingredient of Chinese, Japanese, Korean and Vietnamese cuisine, today the "rice vinegar is widely spread also in the West, where" it arrived (together with sake) above all thanks to the recipe of gohan rice (widely used in sushi).
Rice vinegar is a food almost totally devoid of calories and of uninteresting nutritional content.
It differs from the more common wine and apple vinegars for its milder taste and greater sweetness.
Note: Mirin is a drink similar to rice vinegar but it also contains a percentage of ethyl alcohol.
