E516: CALCIUM SULFATE
Calcium sulfate - also known as gypsum, selenite or anhydrite - is a natural mineral obtained from calcium salts and sulfuric acid. It is a fine, odorless, white to slightly yellowish-white powder. Slightly soluble in water. , insoluble in ethanol
It has a function of acidity regulator and technological adjuvant also called "plaster of Paris". Among the various functions, there are those nourishing for the yeasts in bread, stabilizers and chelators of metals.
It can be contained in various products, such as certain ice creams, spreads, canned fruit and vegetables, flours, wines, bread, spirits and beers.
It can also be included in some pharmaceutical preparations and in the industry for the preparation of gypsum, cement and insecticides.
At a high dosage, calcium sulphate presents some risks; in fact it could cause intestinal obstructions, but at normal doses it seems to be harmless.
