- E380b: TRI-AMMONIUM CITRATE
Ammonium citrate is the synthetically produced ammonium salt of citric acid (E330).
It is an acidity regulator, a buffer and also an emulsifier. It can be contained in various products, such as chocolate sweets, cream cheese, etc.
There are currently no known negative side effects when taken at normal doses, as citric acid is a common constituent of cells in the human body.
In large doses, ammonium citrate can cause digestive disorders and impaired liver, kidney and pancreatic functions.
