E375 NICOTINIC ACID or NIACIN or VITAMIN B3
Nicotinic acid is a compound obtained both by extraction from natural sources (found mainly in cereals, brewer's yeast, meats) and by chemical synthesis (obtained from nicotine). Nicotinic acid (called niacin), like the nicotinamide (also called niacinamide), derives from pyridine and is soluble in water, resistant to heat, light, bases and oxygen.
Nicotinic acid and nicotinamide are absorbed, in the stomach and intestines, through a sodium-dependent facilitated transport mechanism (in the case of low concentrations of the vitamin) and through a passive mechanism (in the case of high concentrations of the vitamin). Inside our organism, nicotinic acid is converted into nicotinamide and, in the tissues, it can be formed starting from tryptophan (amino acid)
Nicotinic acid is a product with an antioxidant and color stabilizing function. It can be contained in various products such as bread, cereals, etc. It can also be used in the pharmaceutical industry as an anti-inflammatory and cholesterol-lowering agent.
Side effects are not known when consumed in normal doses.
