E340 POTASSIUM PHOSPHATE
Potassium phosphate is the potassium salt of phosphoric acid; it is used by the food industry as an acidity regulator and chelating agent (used to sequester metal ions). This product avoids / prevents desiccation and is used in powders as an acidity stabilizer, as well as preventing the formation of lumps in the various products.
To ward off a calcium deficiency, its use is limited (even if the ADI dose is high) as it avidly binds calcium.
ADI DOSE: 70 mg per kg of body weight.
It is divided in turn into the various potassium salts of phosphoric acid:
- E340a POTASSIUM MONO-ORTHOPHOSPHATE
Potassium mono-orthophosphate is an antioxidant compound produced synthetically from phosphoric acid. It can be contained in sweet drinks, gelatinous parts of some instant products, etc.
It does not appear to present significant side effects.
ADI DOSE: 70 mg per kg of body weight.
- E340 b POTASSIUM DI-ORTHOPHOSPHATE
Potassium di-orthophosphate is an antioxidant compound produced synthetically starting from phosphoric acid. It can be contained in milk-free creams for coffee etc.
It does not appear to have any negative side effects.

- E340c POTASSIUM TRI-ORTHOPHOSPHATE
Potassium tri-orthophosphate is an antioxidant compound produced synthetically starting from phosphoric acid. It can be contained in milk-free creams for coffee etc.
It does not appear to have any negative side effects.
