E351 POTASSIUM MALATE
Potassium malate is the potassium salt of malic acid (E296). It is a compound used as a buffer or as a flavoring agent. It can be found in products such as ice cream, fried products etc.

For the moment, there is no maximum consumption dose, but the use of some of its isomers (D, L- and D-isomers) is not allowed in baby food (due to the absence of the enzymes necessary to metabolize these substances ).
There are currently no known negative side effects inherent in the use of potassium malate as a food additive.
