Eptonolactone is a synthetic acidifying compound obtained from hydroxy-heptanoic acid. It is a "dubious" compound because there are conflicting opinions on its toxicity.

Eptonolactone is an acidity regulator and also a flavoring compound. It can be found in different flavors such as vanilla, walnut, coconut.
At the moment it is still a poorly studied additive, the side effects of which are not known.
