E161e VIOLAXANTHINE (C.I. 75135)

Violaxanthin is a yellow or purple dye, of natural origin, obtained by oxidative transformation of zeaxanthin.
Violaxanthin is usually extracted from violet and pansy petals (see photo respectively), but it can also be present in some species of higher plants and algae.
For the moment there are no known harmful side effects for humans.
