Calcium disodium ethylenediaminetetraacetate is a synthetic antioxidant and sequestering compound, which has the function of coating metal molecules to block their reactivity.
EDTA is a compound widely used in the food industry and above all it can be industrially added to condiments, mayonnaise, vegetables, legumes, canned or canned crustaceans, frozen crustaceans, low-fat margarines, etc.
It is also used in certain washing powders, as a solvent for casein and albumin, and in medicine to treat heavy metal poisoning.
Risks: Mineral malabsorption, vomiting, diarrhea, abdominal and muscle cramps, blood clotting disorders and blood in the urine.
Let's say that at the moment there have not yet been many studies on the toxicity of EDTA and that there are conflicting theses in this regard. Frequent consumption of foods containing this additive is not recommended.
