E315 ERITORBIC or ISOASCORBIC ACID
Erythorbic acid is the isomer of ascorbic acid. Even though it has the same chemical formula, isoascorbic acid does not have the same vitamin and improving properties as flour; in fact, its biological activity is 1/20 compared to that of vitamin C; Erythorbic acid is synthetically produced and has an antioxidant and regulatory function.
It could present, as a contraindication, the suppression of the assimilation of vitamin C.
Usually, this additive is used in fish and canned or frozen meat, and in certain types of salami or meat.
There are currently not many studies on this substance, so to avoid risks it is recommended not to exceed the consumption of erythorbic acid.
