- 400 g of cabbage
- 20 g of sultanas
- 20 g of horseradish
- 1 tablespoon of untreated lemon juice
- 60 ml of soy milk
- 100 g of soy yogurt
- 150 g of apples
- 1 pinch of pepper
- 1 pinch of salt
- 20 g of walnuts

- Bowls of various sizes
- Grater
- Wooden spoons

Preparation
- Collect the sultanas in a bowl, then cover with warm water to soften.
- Prepare the buttermilk: in a bowl, combine the soy yogurt, add the soy milk and acidify with a tablespoon of lemon juice. Leave the mixture to rest for 15 minutes: at the end, the buttermilk will have taken on a thick consistency.
- Finely chop the cabbage with the mandolin.

In this version we suggest cutting the cabbage into very thin slices; however, other variations suggest cutting the cabbage with a knife, into thicker strips, or into small pieces! The shape you want to get depends on your personal taste.- Wash the cabbage with plenty of cold water, then spin to remove excess water.
- Prepare the coleslaw: combine the cabbage in a large bowl, add the salt, pepper, buttermilk, raisins squeezed out of the soaking water and enrich with slices of apple and a handful of walnuts, chop coarsely. To taste, enrich the salad with finely grated horseradish.

There are many versions of coleslaw: the two main ones include the addition of mayonnaise (or buttermilk) or vinegar (with the possible addition of mustard), but some suggest using cream or sour cream, and adding other vegetables to the cabbage such as carrots, horseradish, onions, radishes and peppers. Still, in other regions, coleslaw is prepared by adding apples or raisins to the cabbage.
A variant called "red slow" is prepared with ketchup.- To best blend the flavors, we recommend letting the cabbage salad rest in the fridge for at least an hour.
