Yesterday at the supermarket I was fascinated by a box of snails! I couldn't miss the opportunity to taste the snail meat: I was too curious. I got to work and I must say that I cooked them very well. And today I'm here to offer you the recipe for stewed snails: I'm sure you're curious too! Then let's find out together!

Ingrediants
- Frozen product, clean: 400 g of snails
For the sauce
- 1 stick of celery
- 200 g (2 medium) of carrots
- 1 sprig of parsley
- 1 clove of garlic
- 1 pinch of red pepper
- 2 tablespoons of extra virgin olive oil
- 300 g of tomato sauce
- About 50 ml of dry white wine
For the cooking broth
- Q.b. (About 2 L) of water
- About 100 g (1 medium) of carrots
- 1 stick of celery
- 1 bay leaf
- optional: 1 piece of Kombu seaweed
- 1 pinch of salt

Please note
To prepare this recipe we used frozen snails, cleaned and already shelled.- First, prepare the cooking broth for the snails. Boil plenty of water and flavor with vegetables and spices to taste. In this case, we recommend adding a peeled carrot, a stick of celery, a bay leaf, a pinch of fine salt and a piece of kombu seaweed.
Why use Kombu seaweed?
Kombu seaweed (also known as Kelp seaweed) is rich in monosodium glutamate, a well-known flavor enhancer.- Boil the snails (cleaned, thawed and shelled) for about 2-3 hours, until soft.
- Prepare the accompanying sauce.
- Prepare a chopped celery and carrot. Brown the chopped vegetables with a couple of tablespoons of extra virgin olive oil and flavor with a clove of garlic (chopped or poached). Remove the snails from the cooking broth with the help of a slotted spoon and add them to the sauce. Deglaze with the dry white wine. Add the tomato sauce and the chilli.
- Cook the snails for about 20 minutes. Finish with chopped parsley.
- Serve the snails with polenta or with rustic bread.

Stewed Snails are a low-energy dish, rich in water, with a prevalence of energy due to fructose and high biological value proteins. Lipids, both energy and cholesterol, are deficient. The fibers are well present.
Stewed Snails are a product suitable for any diet, except for those suffering from digestive difficulties. The average portion is around 150g (125kcal). Keep in mind that the percentage of edible part of the snails corresponds to 25%, which is why (in the case of snails with shell) the final weight will be about 100g more.
