- 400 g of fresh tuna
For the guacamole sauce
- Q.b. (3-4 tablespoons) of extra virgin olive oil
- Untreated lemon juice
- Q.b. of pepper
- Q.b. of salt
- Half a clove of garlic
- 200 g of avocado

- Coppapasta with a diameter of 10 cm
- Chopping board
- Knife

Preparation
- Cut the fresh tuna into very small cubes.
- Combine the chopped tuna in a bowl, season with salt and pepper. Flavor with lemon zest, a drop of its juice and chopped herbs to taste (eg mint, basil, thyme). Mix everything by adding a couple of tablespoons of oil.
- Place a round steel mold from the side of 8-10 cm on a sheet of baking paper.
- Gather a spoonful of tuna mixture in the pastry ring and gently mash until a regular layer of about 1 cm is obtained.
- Proceed in this way until the dough is finished: you will get 2-3 tuna burgers.
- In the meantime, devote yourself to preparing the accompanying sauce.
- Peel a ripe avocado, cut the pulp into cubes and combine it in the blender. Season with salt and pepper, flavor with the garlic and lemon juice, then blend adding as much oil as you need until you get a cream (3-4 tablespoons).
