Shall we chocolate together? Valentine's Day is approaching and if we want to take our beloved by the throat, we have to roll up our sleeves and prepare something special. So I thought of a precious first course with an enthralling flavor to be discovered. In my Valentine's Day menu, cocoa tagliatelle cannot be missing: and today I'm here to offer them to you.

Ingrediants
For the cocoa paste
- 100 g of re-milled durum wheat semolina
- 70 g of white flour of type 00
- 30 g of bitter cocoa
- 120 g (2 medium) of eggs
For the dressing
- 100 g of mascarpone
- 100 g of speck
- 1 sprig of parsley
- 30 g of walnut kernels
- If necessary: 30 ml of milk
Materials Needed
- Pastry board
- Bowl
- Cooking pan
- Fork
- Rolling pin or dough rolling machine
- Pasta cutter wheel
- Sieve
- Transparent film
- Colander
Preparation
- Prepare the cocoa pasta following the classic method of fresh egg pasta. Sift the white flour with the unsweetened cocoa powder. Then add the re-milled semolina and the eggs: mix well with your hands until you get a smooth and homogeneous mixture. If necessary, add more semolina.
- Wrap the dough in a sheet of cling film and let it rest for at least half an hour to let the dough "relax".
- Roll out the dough with a rolling pin or with the special dough rolling machine. Thus obtaining not too thin fettuccine.
- Bring plenty of water to boil in a large saucepan. Salt lightly and dip the cocoa noodles. Cook for 3-4 minutes.
- Meanwhile, prepare the accompanying sauce. In a pan, gently heat the mascarpone, adding a drop of milk. Combine the bacon cut into strips.
Please note
It is recommended to keep a very low flame to prevent the milk proteins from coagulating, thus forming unattractive “lumps”.- Drain the pasta and add it to the speck and mascarpone sauce.
- Serve the cocoa noodles with the mascarpone sauce, accompanied with a few pieces of walnut kernel (preferably toasted) and parsley.
