Ingrediants
For the biscuits
- 150 g of white flour of type 00
- 1 pinch of baking powder
- Grated rind of untreated lemon
- 1 teaspoon of ginger powder
- 1 teaspoon of cinnamon
- 60 g (1 medium) of eggs
- 40 g of powdered sugar
- 50 g of butter
- 40 g of honey
- 100 g of spelled flour
To decorate (optional)
- 40 g of egg white
- 1 tablespoon of colored sugared almonds, pralines or chocolate sprinkles
- Q.b. of powdered sugar
Materials Needed
- Christmas stencils

- Sieve
- Baking paper
- Baking tray

- Satin ribbons
Preparation
- In a bowl, sift the white flour with the spelled flour, the icing sugar and a pinch of baking powder. Flavor with a mix of spices of your choice, such as lemon zest, cinnamon and powdered ginger.
- Add an egg, the softened butter and the honey: work the dough until you get the consistency typical of shortcrust pastry.
- Wrap the dough in cling film and let it rest for half an hour.
- Take the dough and roll it out with a rolling pin to a thin thickness.
- With one or more shapes in the shape of a star, Christmas tree or ball, make lots of cookies, kneading the cutouts again to get more sweets.
- In the center of each biscuit, make a small hole with the help of a straw or a small cookie cutter mold. Gradually place the honey and spice biscuits on a plate lined with baking paper.
Why pierce the cookies?
The central hole is used to pass the ribbon: only in this way can the biscuits be hung on the tree at a later time.- Brush half of the biscuits with lightly beaten egg white, then sprinkle them as desired with pralines or sugar sprinkles.
- Place the biscuits in the oven and bake them for 10-12 minutes at 160 ° C. Leave to cool completely.
- Make the water icing to decorate the uncoated biscuits. Mix the icing sugar with a few drops of water, adding a few drops of coloring as desired. Place the icing in a paper or plastic croissant, then decorate the cookies as you like. Alternatively, use simple food markers.
- Insert a satin ribbon in each biscuit. Hang the treats on the Christmas tree.
