Carnival time, party time and delicious sweets! Among my favorite carnival sweets there are certainly donuts: I love them baked because they are very light! And today, for an even lighter version than the one I have already proposed, I thought about adding mashed sweet potatoes to the mixture. Let's get to work and find out how to prepare the very light donuts!

- Q.b. of powdered sugar
For about 12-15 donuts
- 60 g (1 medium) of eggs
- 1 pinch of salt
- 500 g of potatoes or sweet potatoes
- 450-500 g of Manitoba flour
- 12 g of brewer's yeast
- 100 ml of water
- Grated rind of untreated lemon
- 4 tablespoons of extra virgin olive oil
- 80 g of sugar

- 150 g of jam
To brush
- 40 g of egg white

Preparation
- Wash the sweet potatoes and scrub them with a brush to remove all traces of soil.
- Boil the sweet potatoes in unsalted water for 40 minutes, or until soft.
- Mash the sweet potatoes with a potato masher or a vegetable mill to form a puree. To facilitate the procedure, you can scrub the sweet potatoes with a knife to remove the skin.

The cooking times of sweet potatoes depend on their size: the larger the potatoes, the longer they take to cook.
For homogeneous cooking, it is advisable to prefer sweet potatoes of similar size.
To understand when they are cooked, simply insert a stick into the heart of the sweet potato.- Combine the mashed potatoes in a bowl, add the sugar, the sifted Manitoba flour and flavor with the zest of an organic lemon. Wait a few moments for the mixture to cool, then add an egg.
- Dissolve the fresh brewer's yeast in warm water and add the mixture to the other ingredients.
- Add 4 tablespoons of extra virgin olive oil and a pinch of salt. Knead all the ingredients for a long time, until you get a soft and non-sticky dough. Put the ball of dough in the bowl, cover with cling film or a cloth and let it rise until the dough triples in volume (2-3 hours).
- When the dough has taken on a swollen and soft structure, roll it out with a rolling pin on a floured surface: you will need to obtain a thickness of 5-6 mm.
- Line two baking sheets with parchment paper.
- With a round cookie cutter with a diameter of 8 cm or with the edge of a glass, cut out some discs and place them on the baking trays. The scraps can be kneaded again and get other discs.
- With a fork, lightly beat an egg white. Brush half disks of dough with the egg white and stuff them in the center with a jam of your choice (eg blackberry jam).
The alternative idea
As an alternative to jam, stuff the discs with hazelnut spread, custard or with a cream based on crumbled amaretti, cocoa and jam.- Cover the stuffed bases with the remaining discs, taking care to press the edges gently with your fingers in order to seal the two parts of each donut.
- Put everything to rise in an environment sheltered from drafts and temperature changes: the ideal is a lukewarm but off oven.
- After about an hour, the donuts will appear very soft: cook in a hot oven preheated to 180 ° C (function: static) for about 20 minutes. Remove from the oven, allow to cool and serve with icing sugar.
- Consume the donuts within two days.
