- 1 bunch of rocket
- 100 g of cherry tomatoes
- 200 g of mozzarella
- 300 g of tomato sauce

Preparation
- Cut the stale bread into cubes and collect it in a bowl. Add salt, pepper, oregano, half a dose of oil and add the lukewarm water, just enough to obtain a moist but not excessively wet mixture. Finish by adding grated pecorino cheese to taste.
- Let the mixture rest for 10 minutes.
- Preheat the oven to 180 ° C (ventilated).
- Grease a sheet of baking paper with the remaining oil, then distribute the bread dough, taking care to level and compact the surface with wet hands.
- Place in the oven and bake for about ten minutes at 180 ° C.
The pan-fried alternative
Those who wish can cook the dough in a pan as if it were a focaccia! In this case, we recommend adding an egg to the dough to keep the bread tied.- Remove from the mold and complete the filling by adding tomato sauce: continue cooking for another 10 minutes.
- Remove from the oven again, fill with mozzarella and cook for another 5 minutes at 180 ° C. The pizza is ready: finish with rocket, cherry tomatoes and a few flakes of parmesan before serving.
