Usually, this recipe is prepared with a tuna and potato pate (discover the recipe for the tuna and potato meatloaf), but today I decided to veganize the dish: discover my idea of fake fish with beans and potatoes, it will be a masterpiece of goodness.

Ingrediants
- Boiled food: 250 g of white beans
- Cooked, boiled food: 400 g of potatoes
- 100 g of soy yogurt
- 1 sprig of parsley
- 1 pinch of salt
- 1 tablespoon (about 20 g) of mustard
- 20 g of capers
- 50 g of green olives
- 20 g of gherkins
- 100 g of carrots
- 50 g of cherry tomatoes
- About 30 g of breadcrumbs

Preparation
- First, cook the beans and potatoes separately.
The quick idea
To prepare this recipe you can use dried legumes or ready-made legumes. In the first case, let the beans soak overnight, then cook them in plenty of unsalted water for 90 minutes, or until soft.
If you use canned beans, remember to rinse them very well before using them. You can also use chickpeas as an alternative to beans.
To cook the potatoes, you can choose to boil them in water or cook them in the microwave: in the latter case, wrap the potatoes in microwave film and pierce them. Cook them in the microwave at maximum power for 4-5 minutes, until they will be soft.
- Peel the potatoes and cut them into small pieces. Collect the beans and potatoes in the blender, then add some capers, olives, and gherkins (leaving some aside for decoration). Combine the mustard, salt, parsley and blend the mixture by adding the soy yogurt. If necessary, add some breadcrumbs to make the dough more consistent.
- Transfer the dough to a tray and shape it with your hands to obtain a large fish.
- Decorate the fake fish with capers, gherkins, cherry tomatoes and carrots, according to your taste.
- Serve the fake fish as an appetizer or, in larger doses, as a main dish. It can be kept in the fridge for 3-4 days.
