Stop giving up! Today I decided to cook a traditional dish that will be the prize after the many sacrifices imposed by a strictly low-calorie diet. I am overwhelmed that every now and then a little sneak can do nothing but good for the palate and mood! So I will make everyone mouth water with the traditional Amatriciana pasta.

Ingrediants
- 280 g of spaghetti, bucatini or another type of pasta
- 350 g of canned cherry tomatoes
- 100 g of bacon
- 50 ml of dry white wine
- q.s. of chilli
- 30 g of pecorino
- q.s. of salt

Preparation
- First, prepare the sauce. In a hot saucepan, brown the bacon cut into strips, without adding any more oil. After a few minutes, the bacon will be browned to perfection: at this point, blend with the white wine and let it evaporate: the wine will be used to "degrease" the flavor. Then drain the bacon from the fat it will have released and set aside.
Attention!
The bacon is rich in fat, so cooking does not require additional oil. When the bacon is browned, the pan must be very hot and the flame must be kept lively. It is recommended to stir frequently to prevent the fat from sticking to the bottom of the saucepan.- In the same saucepan (after removing the bacon), combine the peeled tomatoes, previously cut and deprived of seeds. Season with a chilli pepper, whole or chopped, and season with salt. Let it boil and cook for 15 minutes, until the tomato thickens.
- Meanwhile, boil a saucepan with plenty of water, then add lightly salt. Cook the bucatini (or spaghetti), respecting the times recommended on the label.

Pasta alla Gricia is defined as the ancestor of Amatriciana pasta. In ancient times, the Lazio shepherds cooked a particular pasta using the ingredients they had at their disposal: bacon, pecorino cheese and pepper. Due to the absence of tomato, Gricia pasta is also called "white amatriciana".- Drain the pasta al dente and dip it in the tomato sauce: finish cooking maintaining a gentle flame. Now add the browned bacon and turn off the heat. Serve with grated pecorino romano.
