The walnut cakes are fabulous, I really like them very much but often among the ingredients I read - in spite of myself - tons of butter and sugar. But I didn't give up (never throw in the towel!) And tried to experiment with some recipes. I found the perfect formulation for an amazing nut cake without butter, with (invisible) pureed apples!

Ingrediants
For the cake
- 1 pinch of salt
- 16 g (1 sachet) of baking powder
- 40 ml of corn oil
- Optional: 1 small glass of rum
- 200 g of untreated oranges
- 120 g of walnut kernels
- 400 g of apples
- 60 g of fructose
- 180 g (3 medium) of eggs
- 50 g of potato starch
- 200 g of white flour of type 00
For coverage (optional)
- Q.b. of walnuts
- Peel of untreated oranges
- 40 ml of milk
- 100 g of dark chocolate
Materials Needed
- Hinged pan on the side of 24 cm
- Baking paper

Preparation
- In a bowl, sift the white flour with the starch, then add the fructose and a pinch of salt.
- With the knife, chop the walnuts and toast them in a pan for 2-3 minutes: in this way, the flavor of the walnuts will be more intense. Add the chopped toasted walnuts to the dry ingredients.
- Wash an orange, dry it and grate the zest.
- Peel the apples and cut them into small pieces or strips. Gather the apples in a tall, low-sided container.
- Preheat the oven to 160 ° C.
- Shell the eggs and add them to the apples together with the corn oil and the juice of half an orange. Insert the immersion blender and blend until creamy.
The alternatives ok
In this recipe we suggest the use of fructose, the fruit sugar par excellence capable of providing twice the sweetness of that provided by sucrose.
Furthermore, it is possible to enrich the dessert with chocolate chips or raisins.- Pour the cream obtained into the bowl, then mix until a homogeneous cream is obtained. Season to taste with a glass of rum.
- Add the sifted yeast.
- Line a 24 cm diameter springform pan with parchment paper.
- Pour the dough into the pan and bake in a preheated oven, preheated to 160 ° C (ventilated) for about 40-45 minutes. Before turning off the oven, we recommend the "toothpick test" to ensure the right degree of cooking.
- Remove from the oven and allow to cool.
- Remove the cake from the mold.
- Prepare the glaze by melting the chocolate with the milk. Flavor with orange peel and decorate the surface with a pastry bag. Serve with a few walnuts.
