The broad beans are mostly known by the name "castagnole" and today I propose grandma's recipe! doses and ingredients.

Ingrediants
For 40-50 damselfish
- 130 g of white flour of type 00
- 8 g of baking powder
- 1 small glass (about 35 ml) of rum
- 1 pinch of salt
- 60 g (1 medium) of eggs
- 40 g of butter
- 75 g of sugar
- 110 g of cornstarch
For frying
- About 700 ml of peanut oil
To serve
- Q.b. of powdered sugar

Preparation
- Cream the softened butter together with the sugar. Add the egg, salt and rum, and mix until a creamy mixture is obtained.

It is possible to replace the rum with the same amount of anise. To avoid alcohol, replace the rum (or anise) with vanilla flavoring or with the grated rind of a lemon.- Sift the white flour with the baking powder and the corn starch. Gradually add the powders to the cream obtained, until you get a soft but easily moldable and non-sticky dough.
- Divide the dough into 4 parts and make 4 loaves. Cut each string into small pieces (the size of potato gnocchi) and obtain many balls.
- Heat the peanut oil until it reaches 180 ° C: it is recommended to monitor the temperature with a specific food thermometer in order to avoid the formation of toxic compounds that are potentially harmful to health.

It is advisable to prefer a pot with high sides to ensure that the damselfish have enough space to turn over in the oil.
For optimal cooking, it is also recommended to cook a few damselfish at a time: in this way, it will be easier to keep the temperature constant.- Fry the damselfish in boiling oil for a couple of minutes. Remove the sweets from the oil with the help of a skimmer and place them on a sheet of absorbent paper.
- Sprinkle with powdered sugar and serve.
