We all know how to prepare coffee at home: it's very simple, right? But what if we love espresso - with its perfect and creamy foam - but we only have the dear old mocha at home? Running to the bar would be the most logical answer, but today I decided to reveal a (very old) trick to get the creamy effect of espresso even without using the specific machine and without using milk!

Ingrediants
For a three-cup mocha
- 4 teaspoons of coffee powder "
- Q.b. of water
- 20 g of sugar
Materials Needed
- Moka
- Small bowl
- Table spoon
Preparation
- Fill the base of the mocha with cold water, until the valve is reached.
- Insert the filter and fill with ground coffee, avoiding exerting too much pressure. Screw the base of the mocha with the top. Place the mocha on the fire, taking care to maintain a medium-sweet heat.
- Meanwhile, prepare a high-sided cup with a heaping spoonful of white sugar.
- As soon as the coffee comes out, remove the mocha from the heat and pour the very first drops of liquid into the sugar very quickly.
- Put the mocha on the fire again to allow the coffee to come out completely.
- With a teaspoon, vigorously mix the sugar with the first drops of coffee, until a thick and clear cream is formed.
- Take a teaspoon of sugar cream and pour it into a cup. Pour the hot coffee into the cup with sugar cream and mix: you can see the formation of thick cream on the surface.
Tips ok!
For an impeccable result, it is advisable to work the sugar with the coffee (only the first drops) very vigorously for at least a couple of minutes.
To obtain a regular and soft foam, it is recommended to pour the coffee into the cup with the sugar.- The remaining coffee and sugar cream can be stored in the fridge, covered with plastic wrap, for 2-3 days.

Coffee is a drink that, if not sweetened, does not provide energy nutrients in significant quantities.
With Alice's portions, a cup of coffee (around 70g) provides 23-24kcal, all of which come from sucrose.
Drinking too much coffee is always contraindicated: due to the content of stimulating molecules, coffee should be a "habit that does not exceed 2-3 servings per day. Better to avoid in very young subjects.
