You know those exquisite fruity morsels covered with sugar crystals? Those little fruit-flavored jelly treats? Well guys, today we're going to make kiwi jellies together. If you remember, in one of my previous recipes we have already seen how orange jellies are prepared. Only this time, in addition to the method of preparation, the purpose will also be different. Why do you say? Why us, the kiwi gelees, we also make them functional: we will use the kiwi pulp, therefore fiber, ideal as a mild natural remedy against constipation, so a couple of kiwi jellies a day can be effective to balance intestinal function.

Ingrediants
For the jellies
- 150 g of kiwi pulp
- juice (15 ml) of untreated lemon
- 100 g of sugar
- 3 sheets (8g) of isinglass
- 3-4 drops of chlorophyll
- 6 g of rice flour

Materials Needed
- Immersion mixer
- Food cutting board
- Teaspoon
- Knife
- Small bowl for soaking gelatine
- Small rectangular pan
- Baking paper
Preparation
- Soak the gelatine leaves in the water for at least 10 minutes.
- Meanwhile, peel the kiwis and cut them into small pieces.
- Pour the kiwi pulp into a beaker, add the juice of half a lemon and the rice flour (which will serve as a thickener and will avoid the classic "slippery" effect of jellies).
- With the immersion blender, blend everything until it forms a pulp without pieces of kiwi.
- Add the sugar and bring to a light boil.
- Then add the squeezed gelatine and mix until it is completely dissolved.
- Add a few drops of chlorophyll to taste to strengthen the green color of the kiwi.
- Line a small glass pan with parchment paper.
- Pour the kiwi mixture into the pan and leave to cool completely in the refrigerator for at least 2-3 hours.
- Gently remove the gelatin block from the parchment paper and, with a sharp knife, form many small rectangles.
- To obtain a brilliant effect, pass each gelatin in the sugar and store in a dry environment.
