Preparation
- Pour the eggs and sugar into the container of an electric mixer, adding the zest of a lemon: work the mixture with an electric whisk, until you get a frothy cream.
- Meanwhile, peel the apple and cut it into thin slices. Cut the prunes into small pieces and quickly roll them in the flour.

The step of rolling the prunes in the flour is useful to prevent them from settling on the bottom of the pan once they are added to the dough. The flour that wraps them will keep them perfectly mixed throughout the dough.
- When the eggs and sugar have taken on a foamy consistency, proceed by adding the other ingredients, alternating with flour, yeast, corn oil, lemon juice and milk. Add a pinch of salt and continue to mix the dough with an electric mixer.
- At this point, add the floured prunes to the dough, and pour the mixture into a 20 cm diameter hinged pan: level and cover the surface with the apple slices.
