Ingrediants
For the cream
- 350 g of Greek yogurt
- 1 pinch of salt
- 250 g of fresh ricotta
- 1 cup of milk
- 80 g of fructose
- 1 cup of coffee "
- 150 g of Pavesini biscuits
- 80 g (2 medium) of egg white
To decorate (optional)
- 6 teaspoons in chocolate
- 18 of chocolate coffee beans
- 20 g of bitter cocoa
- 18 of chocolate sticks
Materials Needed
- Electric hand mixer
- Small bowls to present the dessert
- Spoon to distribute the coffee
- Bowl to mix the cream
- Spatula and / or wooden spoon
Preparation
- First, whip the egg whites at room temperature with a pinch of salt until stiff.
- In the electric mixer, mix the Greek yogurt, ricotta and fructose well for a few minutes, until the mixture is rather soft and without lumps.
- Gradually incorporate the egg whites with the spatula, with regular movements (from bottom to top): it should be a very soft cream.
Be careful not to let the egg whites go limp, otherwise the tiramisu will fail.
- Meanwhile, mix the cooled coffee and milk. Pour the liquid into the special watering can for cakes or into a small bowl.
- Sprinkle a little cream (1 teaspoon) in each bowl, then adhere the Pavesini to the edges (in this way, the biscuits will remain attached to the bowl). Also line the base of the bowl with the Pavesini, then wet them with the coffee-milk (if you do not have the appropriate tool, use the spoon).
- Then alternate a layer of cream with one of wet Pavesini (sprinkled with the liquid), and continue for another 2-3 layers.
- Finish with a layer of cream, then sprinkle with bitter cocoa and decorate as desired with chocolate sticks, coffee beans and chocolate spoons.
- Leave to cool in the refrigerator for at least one hour before serving.
