Today “orange juice for everyone”, a breakfast classic, to start the day in the best possible way.
But my idea is not to prepare a simple orange juice to drink in the morning, but an elegant and refined juice to be eaten with a spoon and to be served even on the most important occasions.

Ingrediants
- Zest and 400 ml of untreated orange juice
- Untreated lemon juice
- 20 g of sugar
- 6 g (3 sheets) of isinglass
- 200 g of fresh cream
- 10 g of bitter cocoa
- 1 pinch of cinnamon
- 20 g of powdered sugar
Materials Needed
- Juicer
- Colander
- Electric whips
- Bowls
- Row lemons
Preparation
- Soak the gelatin sheets in cold water for at least 10 minutes.
- Wash the oranges and grate the peel of some of them.
- Cut the oranges in half and squeeze the juice with the juicer.
- Filter the juice and weigh 400 ml of juice.
- Squeeze the lemon, filter the juice and heat it in a saucepan or in the microwave together with the sugar. Squeeze the isinglass and dissolve it in the hot lemon juice.
- Pour the isinglass dissolved in the orange juice and mix thoroughly.
- Pour the juice into 4 containers (bowls, cups or glasses) and let it solidify for at least a couple of hours.
- In the meantime, devote yourself to decoration. Whip the cream together with the icing sugar and gently add the sifted bitter cocoa and cinnamon.
The Light idea
As an alternative to cream, you can use simple ricotta: in this way, the dessert will be even lighter!- When the orange juice has gelatinized, decorate with a few tufts of cocoa cream and serve with orange peel and cinnamon sticks.
