For the salmon pie
- 1 kg (1 slice) of fresh salmon
- 2 tablespoons of extra virgin olive oil
- 1 roll (250 g) of puff pastry
- Q.b. of pepper
- Q.b. of salt
- 1 piece of ginger
- Steamed food: 500 g of spinach
To brush
- 60 g (1 medium) of eggs
- 1 pinch of salt
- 1 pinch of pepper

Preparation
- Thoroughly wash the fresh spinach and steam it for 5-6 minutes. Squeeze the spinach, cut them coarsely with a knife and sauté them in a pan with a drizzle of oil, salt, pepper and fresh peeled and grated ginger for 5 minutes. Leave to cool.
- In the meantime, remove the skin from the salmon and cut it in half to obtain two rectangles of equal size. Sear the salmon steaks in a pan, without adding any other seasonings.
- Preheat the oven to 200 ° C.
- Unroll a rectangle of puff pastry and distribute a part of spinach in the center. Place the first salmon steak on it, stuff with other spinach and arrange the other piece of salmon. Cover everything with the leftover spinach and wrap the puff pastry on the filling.

As an alternative to spinach, you can use other vegetables, such as zucchini, asparagus or red radicchio.
Those who do not like pasta, can instead cover the salmon with sliced potatoes, previously blanched in water.- Decorate the surface with interwoven puff pastry ribbons.
- Shell an egg, beat it quickly with salt and pepper, then brush the surface of the pastry.
- Place the pie in the oven and bake at 200 ° C for 35-40 minutes.
- Wait 15 minutes before cutting the crusted salmon.
- Serve with a side dish of potatoes in a pan or with simple mashed potatoes.
