Who thinks that vegan recipes are sad and tasteless, will change their mind today: we bet? We are in the middle of carnival and, you know, in this period fried foods abound on our tables! So I wondered why not to formulate alternative pancakes, without using eggs, butter or other ingredients of animal origin. Take the notepad and write down the recipe: go with doses and ingredients to prepare the vegan pancakes, wholemeal with tofu and banana!

Ingrediants
For the pancakes
- Whole food, organic: 50 g of cane sugar
- 1 pinch of salt
- 50 g of frumina
- 100 g of wholemeal flour
- 8 g of baking powder
- 100 g of sultanas
- 100 ml of soy milk
- 100 g of banana pulp
- 125 g of tofu
- Peel of untreated oranges
To serve
- Q.b. of brown sugar
For frying
- About 500-600 ml of peanut oil

Preparation
- Soak the raisins in warm water to soften them.
- Cut the tofu into cubes. Peel the banana and cut the pulp into slices. Grate the zest of an organic orange. In a blender, combine the tofu, banana and orange zest: chop everything until creamy.
Tasty alternatives
As an alternative to raisins, you can use dehydrated and diced nuts, such as plums, apricots, blueberries, goji berries, etc.
As an alternative to orange, it is also possible to flavor the batter with lemon or tangerine zest.- Combine the tofu cream in a bowl and mix everything with the brown sugar. Add a pinch of salt. Drain the soft raisins from the soaking water and add it to the cream. At this point, add the wholemeal flour, wheat starch and vegetable milk (eg soy milk): mix until a thick batter is obtained.
- As a last ingredient, add the sifted baking powder and mix.
- Pour the peanut oil into a pan and, with the food thermometer, measure the temperature up to 180 ° C.
- With the help of a couple of steel spoons or an ice cream portioner, collect a part of the batter and fry in oil at 180 ° C. Cook the pancakes for 3-4 minutes, turning them from time to time.

It is advisable to prefer a pan with high sides to make sure that the pancakes have enough space to toss and turn in the oil.
For optimal cooking, it is also recommended to cook a few pancakes at a time: in this way, it will be easier to keep the temperature constant.- Drain the pancakes with a slotted spoon and place on a bowl lined with absorbent paper.
- Sprinkle with finely chopped brown sugar.
