Preparation
- Melt the butter in a double boiler or simply in the microwave oven.
- In a bowl, pour the yogurt, sugar and butter, then mix everything well with a wooden spoon.
- Add a pinch of salt, the sifted yeast and, gradually, the flour.
The flour (which must be sieved) is gradually added to the mixture, until a very elastic, soft dough is obtained, but which does not stick to the hands.
- Mix everything well first with a wooden ladle, then with your hands: it is advisable to transfer the mixture onto a well floured work surface and mix not too long (to avoid that the dough requires too much flour).
- Divide the dough into two balls.
- Roll out each ball between two floured sheets of baking paper, until it forms a large, very thin disc.

Do not roll out the dough directly on the pastry board without baking paper: in this way, in fact, you prevent the dough from sticking to your hands, to the rolling pin and to the pastry board!- From each disc, make 8 triangles, cutting the mixture obtained in a cross.
- On the base of each triangle, lay a teaspoon of jam and roll the dough on itself, taking care to tighten the edges well to prevent the jam from coming out during cooking (we recommend that you refer to the video). of each triangle towards the inside, to obtain a horn shape.
- Carry out the same operation with the other dough ball, but replace the jam with chocolate or with another filling of your choice.
- Arrange the croissants obtained on the baking sheet lined with greaseproof paper and bake at 180 ° C for 15 minutes.
- Before serving, sprinkle with a little icing sugar.

Egg-free yogurt croissants are an "alternative to" classic "baked goods. This recipe allows you to significantly reduce the cholesterol content inside the food, even if the amount of saturated or hydrogenated fats (of cocoa cream) is however high enough to make egg-free yogurt croissants an inadvisable food in the diet due to high blood cholesterol.
