Break at 5 pm: tea time (and I would add “with biscuits”)! Yes, because biscuits are the soul of tea. When I find myself in front of a nice cup of steaming tea, I almost feel obliged to soak some biscuits. So let's not waste time, and prepare some excellent rustic milk biscuits!

Ingrediants
- 250 g of white flour of type 00
- 60 g (1 medium) of eggs
- 60 g of concentrated milk or 30 g of powdered milk
- 50 ml of pasteurized whole milk
- 8 g (half sachet) of baking powder
- 50 g of butter
- 70 g of sugar
Materials Needed
- Bowl
- Pastry board
- Baking paper
- Baking plate
- Square or rectangular cookie cutter
- Rolling pin
- Decorative rolling pin (optional)
- Sieve
Preparation
- Sift the flour into a large bowl. Combine the sugar, the milk powder and the sifted yeast. Mix well.
- In the center of the "powders", add the egg, softened butter and milk. Mix the ingredients well until you get a soft and smooth paste.
- Wrap the dough in cling film and let it rest for 30 minutes.
- Roll out the dough on the work surface to a thickness of a few millimeters.
The right idea
To embellish the surface, you can also use the decorative rolling pin (generally used for sugar paste), AFTER rolling out the dough with the smooth wooden rolling pin.
Furthermore, it is possible to make small incisions on each biscuit with the prongs of a fork.- With a rectangular or square pastry cutter, obtain the biscuits and arrange them on a couple of baking plates suitably lined with greaseproof paper.
- Bake the biscuits in a hot, preheated oven at 180 ° C for about 10 minutes. Then lower the oven temperature to 100 ° C and let the biscuits dry for another 15 minutes. Turn off the oven and let the biscuits cool completely before removing them: in this way you will get crunchy and dry biscuits.
