- 120 g (2 medium) of eggs

Preparation
- Shell the eggs and collect them in the container of the electric mixer together with the sugar, honey, orange zest and almond flavoring. Work in foam for 10 minutes.

- Transfer the dough into a pastry bag to be able to divide it more easily into the molds.
- Place the madeleine molds on a baking sheet.

Light Madeleines are foods that belong to the group of sweets.
They have a significant energy intake, mainly provided by carbohydrates, followed by lipids and finally proteins.
Carbohydrates are mainly complex, peptides of medium-high biological value and polyunsaturated fatty acids.
They contain a not too high dose of fiber; the cholesterol content, on the other hand, is low.
They bring gluten and little lactose; it is not a recipe rich in histamine or histamine liberating foods.
Compared to the traditional recipe, the Light Madeleines are more suitable for more restrictive diets; however, they should be drastically reduced, if not avoided, in case of overweight, type 2 diabetes mellitus and hypertriglyceridemia.
