- 50 g of dark chocolate
- 50 g of sugar
- 50 g of butter
- 120 g (2 medium) of eggs
- 100 g of white flour of type 00
- 5 g of baking powder
- 40 ml of milk
- About 50 g of sour cherries in syrup

Preparation
- Chop the dark chocolate into small pieces. Mix the chocolate with the butter and melt it in the microwave or in a double boiler.
- Then add the sugar and mix thoroughly: all the chocolate must be melted.
- Preheat the oven to 180 ° C.
- Shell the eggs and divide the yolks from the whites. Beat the egg whites until stiff peaks, adding a pinch of salt to facilitate the whipping.
- At this point, add the sifted flour together with the baking powder, the milk and the two egg yolks: mix until the mixture is soft and velvety. To the mixture, gently add the egg whites, always mixing from bottom to top to avoid letting them go limp.
- Take a part of the dough with a ladle fitted with a spout and fill up to 1/3 each cupcake mold: in this case we used rose-shaped molds. Place a "black cherry in syrup in the center of each cupcake and cover again with more dough, leaving the mold empty for 1/3 of the height: the cupcake must swell during cooking and come out slightly (but not too much!) from the mold.
