It is a special, very delicate condiment, suitable both for flavoring pasta, and to accompany croutons or shrimp cocktails! Ingrediants
- 400 ml of milk
- 30 g of cornstarch
- 100 g of velvety tomato puree or 1 tablespoon of tomato paste
- 1 pinch of salt
- 20 g of grated Parmesan cheese

Preparation
- Pour 300 ml of milk into a saucepan and add a little salt. Warm gently.
- Meanwhile, dissolve the cornstarch in the remaining cold milk. Add the tomato paste and continue to mix with the whisk to mix all the ingredients: the milk will take on a pink-red tint (hence the name "aurora sauce").
- When the milk in the saucepan almost boils, add the milk with tomato and starch, and continue stirring until the sauce thickens: cook for a couple of minutes on a very low flame.

As an alternative to tomato concentrate it is possible to use puree (preferably velvety): in this case, the sauce will be more liquid due to the presence of water in the puree. To make the sauce thicker, it is advisable to heat the tomato puree separately to dry it from the water present: therefore add the sauce reduction only when the béchamel has thickened.- Turn off the heat and flavor the sauce with grated Parmesan cheese. If the aurora sauce is not used immediately, it is advisable to cover it with a sheet of plastic wrap to avoid drying it on the surface.
