Don't worry: today I will give you the right inspiration to season pasta! I have in store for you a delicious and very fresh sauce based on rocket and pine nuts, a reinterpretation of the classic Genoese pesto! Let's find out what it is!

Ingrediants
- 80 g of rocket
- 50 g of grated Parmesan cheese
- 30 g of pine nuts
- 50 g of pecorino
- q.s. of salt
- 3 tablespoons of water
- 2 tablespoons of extra virgin olive oil
Materials Needed
- Mortar and pestle
- Bowl
- Cooking pan
- Mixer
- Grater
Preparation
- Wash the rocket and dry it.
- Toast the pine nuts to enhance the aroma. Heat a pan and add the pine nuts: keep a moderate flame and stir often to avoid burning them. The pine nuts are ready when they give off an intense aroma. Leave to cool.
- Blend the pecorino cheese and grate the parmesan.
- Pour a part of the pine nuts in a mortar, add a part of the rocket and grind everything with a pestle. Continue in this way, little by little, until all the rocket is used up.

It is possible to replace the mortar with an electric blender: in this case, however, it is recommended to blend intermittently to avoid overheating the delicate active ingredients contained within the rocket. To preserve the precious active ingredients, we recommend the use of mortar.- Now mix the rocket and pine nut pesto with the two grated cheeses and salt. Mix everything with a few tablespoons of oil and water.
- Store in the fridge, covering with extra virgin olive oil and consume within 5 days.

Rocket Pesto is an alternative accompaniment sauce to Genoese pesto. It provides a rather high energy quantity, mainly supplied by lipids; proteins also play an important role, while carbohydrates are deficient.
